Fresh green beans as a side dish is a great addition to any meal in any season!
  • 1 lb fresh green beans, ends snapped/cut off
  • 1 tbsp butter and 1 tbsp olive oil (or 2 tbsp bacon grease)
  • 3 cloves garlic, minced
  • 1 small onion, chopped
  • 1 c chicken broth
  • ½ small red bell pepper, chopped
  • Garlic powder to taste
  • Salt and pepper to taste
  • Optional: crumbled cooked bacon
  1. Add butter and olive oil in a large pan over medium low heat. Add garlic and onions and cook, stirring, for about a minute. Then add the green beans and cook for another minute.
  2. Add chopped red pepper, chicken broth, and salt and pepper to taste. I also added a sprinkle of garlic powder to add some more flavor. Stir, then turn the heat down to low and cover with a lid, leaving the lid cracked slightly for the release of steam for about 25 minutes, allowing the broth to cook down.
  3. Serve hot and for an extra bonus top with crumbled bacon.
