• Summer Bucket List

It is officially summer! That means sun, outdoor meals, walks and finding ways to entertain the kids at home. That’s where a Summer Bucket List comes in handy. Although this summer will look different than past summers with various closings and policies, there are still plenty of activities to do and places to visit that are safe and fun. Below I’m sharing some of our favorite summer activities, a printable copy of our personal Summer Bucket List that is FREE to download, as well as a Free blank document you can fill out on your own. I kept the color minimal as I am someone who seems to always run out of color…

  • Green Drink Recipe

Hello everyone and happy Tuesday.  Last week I posted a picture of my green drink on Facebook and Instagram and got a lot of questions about what was in it, why I drink it, and how to make it.  I thought I would take the opportunity to share what it is with you! There are recipes all over the internet for this green drink and that green drink but the recipe I use is a combination of a couple different recipes I had found online.  What is great about a green drink is that you can substitute different fruits and vegetables into the drink based on your own preferences.  I warn you that it may not look pretty…

  • Watermelon, Feta, and Cucumber Salad

I LOVE FARMERS MARKETS.  There, I said it.  Who out there relates?!  There is something about the fresh fruits and vegetables at my fingertips, the energy in the air, and the hustle and bustle of people and vendors that always excites me about the farmers market.  This past weekend my family and I went to the Minneapolis Farmers Market and I came home with a bag full of fruits and veggies ready to be eaten. Here are some yummy produce waiting to be bought. I also love that there is so much more than just food at the market, such as flowers, meat, popcorn, and other things. My mom caught my baby girl Gianna…

  • Summer Black Bean Salad

Are you all feeling the heat and humidity like I am? Here in Minnesota the storms have been hitting hard which means the humidity is high and also my hair is CRAZY a bit frizzy.  Which all (except the hair) leads me to put together quick, simple, and refreshing meals and snacks.  Enter my favorite side dish, black bean salad.  A roommate of mine in college introduced me to this dish many years ago and have loved it ever since .   The beauty of this dish is it is low cost (which is how I managed to eat it in college) and extremely healthy as well with ingredients like black beans, corn, and cilantro.  In fact, just this morning I read…

  • Iced Chai Latte

Hi everyone, hope you had a great start to the week!  The warm weather is finally starting to set in here meaning hot coffee drinks will be replaced with cold beverages.  A favorite refreshing summer drink for me is an iced chai latte which is cool, creamy, and light with hints of spices. As easy as it is to order iced chai from a Starbucks or Caribou coffee shop and feed my addiction love of iced chai, it most certainly also feeds a growing hole in my wallet with a large iced chai easily costing around $4.  So, my solution to this craving? Make them at home! Iced chai lattes are very easy and quick to…
