Lime Chicken Enchiladas
You know how some days you want to have your food just cook itself leaving you to sit back and relax? Well, I have come to realize that a slow cooker is about as close to that as I am going to get. The chicken in these lime chicken enchiladas comes out so flavorful, tender, and shreddable (is that even a word?) that I purposely made too much so I could use the leftovers for quesadillas the following day. All it took to make the chicken was throwing the few ingredients in the slow cooker, turning it to high, and walking away. Beautiful! Here are the 4 ingredients for the chicken in the…

This Week’s Top 5
While summer feels like it is quickly slipping away, there are things I am just not ready to let go of. Here are the top 5 things that I am loving this week and am holding on to tightly as summer is not gone yet! 1. The Summer Dress ‘Renley’ Lace Fit & Flare Dress This dress is light, airy, and a beautiful color. As the cooler temperatures set in this could easily transition to fall with some knit tights and a sweater. 2. The Go-To Summer Food Via MyRecipes Taking out the grill and serving up some burgers is always a summer favorite for our family. What I love about this…

Sriracha Mayo on Corn
Yes, you read that right, Sriracha mayo on corn. So, so, so GOOD! Summer for our family always means lots of corn on the cob which also equates to finding different toppings to make it taste even better. Last night we experimented with a few different toppings and the clear winner was a combination of Sriracha and mayo, with the addition of parmesan cheese and a shredded Italian cheese mix. Just mix 2 Tbsp of Sriracha with about a cup of mayo. Definitely adjust the ratio of Sriracha to mayo depending on your preference of heat. You can also add some garlic powder to add even more flavor. If you prefer to just buy the…

Breakfast Egg and Sausage Muffins
Mornings can be a bit hectic around our household especially if we are all trying to get out the door on time. I am a big believer in eating breakfast to start the day right but sometimes because we are rushing cereal becomes an attractive choice for a quick breakfast, even though I know it is definitely not the healthiest of food for myself, the Mr, and the kids. Enter: Breakfast Egg and Sausage Muffins. These little muffins are simple, healthy, and best of all fun to make with the kids. They can be made up of whatever veggies and/or meat you have left in your fridge and each person can even customize their own muffin. The kids had a…

This Week’s Top 5
Wow, Thursday already! It is amazing how quickly this summer is flying by. This week’s Top 5 is a combo of clothes, decor, food, and a winning attitude. Here are the things that moved me this week and as you read think about what things have peaked your interest over the past couple of days. 1) The Neon Pink and Black Combo Via Pink Peonies I am head over heels in love with the combination of neon pink and black, especially when the pink is in the shoes. A perfect pairing! 2) Freezing Greens Via Fitsugar I did a post last week about my green drink and how I make it. What I did not…

Green Drink Recipe
Hello everyone and happy Tuesday. Last week I posted a picture of my green drink on Facebook and Instagram and got a lot of questions about what was in it, why I drink it, and how to make it. I thought I would take the opportunity to share what it is with you! There are recipes all over the internet for this green drink and that green drink but the recipe I use is a combination of a couple different recipes I had found online. What is great about a green drink is that you can substitute different fruits and vegetables into the drink based on your own preferences. I warn you that it may not look pretty…

Easy Korean Beef Bowl
Growing up with a Korean mom exposed me to some amazing cultural food that I think a lot of people would love if they tried it. I know I converted my husband to loving Korean food! The great thing about Korean food such as this easy Korean Beef Bowl is that it is typically healthy and especially yummy. In addition most of the ingredients used are often found at your local grocery store. This Korean Beef Bowl is a play on bibimbap (rice and veggie mix) and bulgogi, a flash-grilled meat dish. What is great is that if you are short on time and/or money this dish keeps it pretty fast and cost…

Watermelon, Feta, and Cucumber Salad
I LOVE FARMERS MARKETS. There, I said it. Who out there relates?! There is something about the fresh fruits and vegetables at my fingertips, the energy in the air, and the hustle and bustle of people and vendors that always excites me about the farmers market. This past weekend my family and I went to the Minneapolis Farmers Market and I came home with a bag full of fruits and veggies ready to be eaten. Here are some yummy produce waiting to be bought. I also love that there is so much more than just food at the market, such as flowers, meat, popcorn, and other things. My mom caught my baby girl Gianna…

This Week’s Top 5
Hello everyone and happy Thursday! As I peeked through the internet this week there were some really great things that I absolutely love. In no particular order here are the top 5 things that I have been obsessing over this past week. 1. The Maxi Dress: Printed Maxi Dress $78.00 Love that this dress is simple yet so pretty. Great for summer days out shopping or lunch with the kids. 2. The Tote: Halogen Graphic Tote $78.00 During the summer I always default to a tote because I find myself carrying more things such as sunscreen, camera, sunglasses, and my iPad. This tote is great because since it is neutral it will go with…

Red, White, and Blue Drink
Need a last minute drink for your 4th of July party today? I was looking for a recipe for the big holiday bash that would be easy to put together the day of the party and would be pretty inexpensive as well. I had already baked the Firecracker Cookies but knew I needed to add something else that was quick and easy to prepare. Scrolling through some ideas online I saw a picture of a tri-colored drink. Hmm, something I don’t have to bake or cook? Let’s check this out! Everything I read said it was as easy as pouring together three drinks with different sugar contents because the drink with the most sugar…
