    So the secret is out… I’m expecting! We are so excited to announce that we are expecting a little boy in April of 2016 and we could not be more elated. This is baby #4 for me but even though I’ve done this a few times before, the excitement never gets old. What has been different this time around is that since I am due in April my 3rd trimester will be through the winter months whereas with my other three all being born in the summer/fall timeframe I was always bigger in the warmer months.     Kimbap is by far one of my favorite Korean foods to make AND eat.  They are great for a snack, for on-the-go, for lunches, and especially yummy at, well… any time! I grew up with my mom making them, stuffing the gim, or seaweed sheets, with all sorts of goodies like rice, egg, cucumber, and more.  It would be an understatement to say that my kids love them as well.     This past 4th of July my mother-in-law passed on a Betty Crocker recipe to me that looked fun, festive, and easy enough for the kids to help out.  The resulting Firecracker Cake not only visually looked amazing, it was also absolutely delicious! The kids received numerous compliments on the cake and the best part is that although it looked complicated to put together, it was actually quite easy.     You know the scenario: you get home after a day of work and are now in charge of making food for some hungry little mouths.  As I hurriedly search through the pantry I am looking for something that is quick, simple, and involves whatever ingredients we are already have.  Cue here: Spinach and Broccoli Alfredo.  This has become a staple dish for dinner that is perfect for evening such as the one described above.  Simple, tasty, and everyone is happy!
